I know it might sound silly coming from a food blogger, but I LOVE salads. I craved them during both of my pregnancies and have one almost every single day. I’m a firm believer that if you “doctor” them up the right way, you will never get bored of eating salad! This Greek chicken salad is one of my favorites. Everything about it will have you swooning!

- Great for meal prep. Since this salad is assembled in mason jars, it’s perfect for lunch throughout the week. I love that all I have to do is just pour it out into a bowl, give it a toss with my fork and I’m ready to go!
- Super flavorful. This salad is loaded with fresh ingredients like kalamata olives, feta cheese, crisp romaine lettuce, and cherry tomatoes, then drizzled with a simple Greek vinaigrette.
Recipe Ingredients
The dressing is made with just a few basic ingredients, while the salad is loaded with fresh veggies, chicken, and cheese. Scroll down to the recipe card below for the exact measurements.
Greek Dressing:
- Garlic
- Spices – Oregano and basil are the main seasonings in this dressing, with a bit of salt to taste.
- Dijon mustard – Adds an earthy bit of heat and lots of flavor.
- Red wine vinegar & olive oil – The base of the vinaigrette. Use a good olive oil. The flavor makes a difference!
The Salad:
- Chicken – I used the white meat of a rotisserie chicken. Any shredded chicken works!
- Veggies – Cucumber, cherry tomatoes, yellow pepper, red onion, kalamata olives, and romaine lettuce make up the layers of the salad.
- Feta cheese – The tangy, salty final touch to the salad! Goat cheese would work too, if you don’t mind straying from the Greek theme a bit.
How To Make Greek Chicken Salad
I love how quick and easy this salad is to prepare! It’s perfect for busy summer days.
- Make the dressing. Whisk all dressing ingredients together, except for the olive oil, until combined. Slowly whisk in the oil. Set aside.
- Assemble the salads. To each mason jar, add the ingredients in this order – dressing, cucumber, tomatoes, yellow pepper, red onion, olives, chicken, lettuce, and feta cheese.
- Store or enjoy. Enjoy immediately or put the lid on and store the salads in the fridge.
Tips & Variations
This Greek chicken salad is so easy to make that not much needs to be said, I do have a few general tips. And lots of ideas to customize it!
- Use large mason jars. I like to use the 32 oz or quart size mason jars. I find they are the best for packing and give you a good size salad, plus ingredients don’t get stuck on the way out! You can even buy them in bulk on Amazon!
- Vinaigrette first! If assembling these Greek chicken salads as mason jar salads, it’s important that the vinaigrette is the first thing in the jar. Otherwise, the other ingredients can get soggy and mushy!
- Assemble as a regular salad. If you aren’t trying to meal prep these Greek chicken salads, then you can just assemble them in a bowl as usual, in the regular order (lettuce, veggies, chicken, then cheese and vinaigrette).
- Top with grilled chicken. I love the ease of using rotisserie chicken in recipes but during the summertime, I’ll often top these salads with diced grilled chicken.
- Try a different protein. Chicken is easy and everyone loves it but this salad would also be great with shrimp or grilled lamb.
- Customize the veggies. Feel free to add or omit any veggies. Grilled zucchini or eggplant and chickpeas are all good options.
Proper Storage
If stored in airtight mason jars with the dressing on the bottom, this Greek chicken salad will last for 3-5 days in the fridge.

Ingredients
Greek Dressing:
- 1 garlic clove, minced
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 tablespoon dijon mustard
- 1/3 cup red wine vinegar
- 1/3 cup olive oil
- salt to taste
Greek Chicken Mason Jar Salad:
- 4 Quart Size Mason Jars, with lid
- 2 cups shredded rotisserie chicken (I use just the white meat)
- 2 cups diced cucumber
- 1 1/3 cup sliced cherry tomato
- 1 cup diced yellow pepper
- 1/2 cup diced red onion
- 1/2 cup sliced kalamata olives
- 6 cups chopped romaine lettuce
- 4 tablespoons crumbled feta cheese
Instructions
- For the Greek Dressing, to a small bowl add minced garlic, oregano, basil, mustard, red wine vinegar and salt. Whisk to mix everything together. Slowly whisk in the olive oil. Set aside.
- Assemble the Mason Jar Salads: line up your mason jars. To each jar add 3 tablespoons of the dressing, 1/2 cup diced cucumber, 1/3 cup cherry tomatoes, 1/4 cup yellow pepper, 2 tablespoons of chopped red onion, 2 tablespoons of kalamata olives, 1/2 cup shredded chicken, 1 1/2 cup chopped romaine and 1 tablespoon feta cheese.
- Put the lid on and store in the refrigerator.
